September 2, 2010 "What a difference a day makes" - rain - salsa

I am happy to report we received a full day of rain yesterday, totaling 6 inches. We are supposed to get even more later today. Much cooler temperatures too.

Things are definitely looking up.

I have been slowly canning tomatoes that DH had picked for me. I made 18 pints of salsa which I think I got a little too hot.

  1. Glenda, I've been lurking for quite some time now -- I even have you on my automatic RSS feed! I draw so much inspiration from your daily reports, really appreciate the effort you make to post photos so often! That would be my nemesis if I were to blog...

    We're still waiting on red tomatoes, but the tomatillos have been coming on in droves. I've been peeling off the husks and freezing gallon bags so when the weather turns and I have more indoor time, I can grind them up for the canned tomatillo/onion/garlic/mexican spices/lime juice recipe I have. Supposed to be an authentic green salsa dip, but we really prefer to can in quarts and use as a simmer sauce for chicken served over rice.

    Hope your red tomatoes make it before frost. I tried tomatillos one year and didn't know what to do with them. I need your recipe. The chicken over rice thing appeals to me.
